Fruit juice can be made from a wide variety of fruits. The major components of fruit juice are water, sugars, vitamins, organic acids and phenolic compounds.
Making fruit juice is a rather common way of preservation of fruit.
Unfortunately, most fruit juices are sensitive to heat, oxygen and light. Several techniques can be applied to maintain the original quality and aroma of fruit juice. Not all of these are effective. In general, a process will be effective if the product is exposed to lower temperatures for shorter periods of time in an environment that does not allow oxygen to penetrate.
